Next time you go to Rome, try Roscioli (http://www.anticofornoroscioli.com/ristorante.htm ). I heard that it's where chefs go to eat.

P.S. Slow Food is a very good guide for Italy. They list local, non touristy addresses. (Although it's difficult in Rome to remain non touristy i guess!)
